This is a new cheese produced by Quicke's dairy in Devon. The cheese is an experimental combination of Quicke's Mature Cheddar and a Bavarian cheese called Alp Blossom produced by the cheesemaker Albert Kraus in Ebersbach, Germany.
The Quicke's Mature Cheddar is added to the Alp Blossom curds during the traditional Alpine cheesemaking process. The wheels are pressed into moulds and matured for 3 months
The resulting cheese has a unique texture, sweet aroma and flavour notes starting with hazelnut, moving through sweetness and acidity, before ending with a bright apricot finish.
