This was the first cheese produced by the Ticklemore Dairy, almost 40 years ago. Due to the fact that the ewe's milk is seasonally produced, the cheese may not be available all year round.
There is seasonal variation in flavour, being lighter and more delicate at the start of the season (May onwards), whilst later on the cheese has a more robust flavour and a denser texture.
