Morbier is a creamy, semi-soft cheese from France. Instantly recognisable by the thin black layer running through the middle, it is a mild, slightly nutty flavoured cheese.
Named after the village of Morbier and originally produced by the same farmers who made Comte.
The black layer across the middle was traditionally ash, which protected the morning curds until the evening curds could be placed atop.
Morbier has a springy texture, slightly fruity and yet also with a slight nuttiness, though with a pungent aroma.
